Some things I forgot to mention in my presentation:

I often
use a
User Agent switcher to test new functionality in Firefox
before I do my actual mobile testing. You can set your user
agent to various phones to see how your template logic works
out. Firefox 3.5 supports geolocation and some of the HTML 5
storage functionality, so it's not that bad for testing.

There are some frameworks designed specifically for an iPhone
look and feel; I haven't tried any myself, but they may be worth
looking at if you're going for a more native-seeming experience.
Some that look interesting
are iUI
and PastryKit.
